Birthday Paella

My most ambitious foray yet. I’ve made hundreds of these over the years, but LF was having 12 people for her D’s birthday and picked up an 18″ paella pan from Chef Central up in Paramus. (Which by the way for a foodie like myself was heaven).

4 1/2 cups of rice, nine-plus cups of broth, three or four pounds of chicken, red peppers, artichokes, green peas, zucchini, onions, garlic, saffron, beans and probably something else I forgot.

You know how after a long day of driving you shut your eyes once you’re in bed and you still see roadway? I saw a big, round pan.

It seemed like everybody liked it. We’ll try it again next Saturday for a similarly sized group.
